Well, I don’t know about you guys, but the flu is definitely going around Tallahassee right now. Doug and I are both sick, and I figured we could both use a good dose of some home-made chicken noodle soup! Being broke college kids, it is of course way easier to reach for that ready made can of Campbell’s, but the point is to get better here…..so I would rather make my own soup where I can control the amount of salt that goes in and know the chicken is real! Does anyone else ever get slightly alarmed thinking what ingredients are in that stuff? No? Maybe it’s just me. But anyway! Point is I wanted to make some soup to hopefully help us both feel better.
Sorry, I totally did not take pictures while I was making it, I decided last minute to write a post about it. But I do have the final product! I may or may not have put too many noodles in it……… :P
It is pretty quick and simple, and WAY better than anything out of a can!
Adapted slightly from my grandpa’s recipe!
-2.5 32 oz. boxes of chicken broth
-2 tablespoons butter
-1 large diced onion (I can’t stand chopping onion so I just use 1 package of the pre-chopped onion)
-6 stalks celery, diced
-6 carrots, peeled and sliced
-Extra-Virgin Olive Oil
-1.5 lb. boneless, skinless chicken breast
-Salt and Pepper
-Dried Thyme
-Dried Parsley (or fresh, whatever you have!)
-1 box dittalini pasta (or whatever pasta you want to use)
1. Pour the chicken broth into a big pot-add in the butter, onion, celery, and carrot. Put on Medium heat, covered, until it begins to boil, then bring down to medium-low.
2. While that is simmering, saute the chicken in a pan with some e.v.o.o. I put salt, pepper, and some dried thyme over my chicken breasts before placing into the pan. Once the chicken is done, pull it apart into bite sized pieces and add into pot with broth and veggies.
3. Add in 3/4 of the box of pasta (this is how I made it, but if you want it more soupy and less noodley, then I would say go for 1/4-1/2 a box) into the pot with the broth, veggies, and chicken. Sprinkle in some parsley, I did about 1 tablespoon. Let it cook covered on medium-low until the noodles are soft, 10 to 15 minutes.
